The Food Service Manager if responsible for supervising, coordinating and to participating in activities of cooks and other kitchen personnel engaging in ordering, receiving and preparing all food products following the highest standard possible.

Responsibilities

  • Maintain a clean, pleasant and professional image to the guest, wearing the proper uniform at all times.
  • Create and maintain a safe and clean work environment at all times.
  • Monitor and record sanitation practices to ensure that associates follow standards and regulations.
  • Responsible to maintain proper staffing levels.
  • Forecasting and planning of business for sufficient staffing, work and inventory at all times.
  • Maintain a fair work environment.
  • Possess full knowledge and understanding of our company&##39;s handbook, SOPs, and processes; adhere to and enforce those in a consistent manner.
  • Provide a clear and productive work environment for all associates.
  • Communication to Foodservice General Manager, Store General Manager, Department Leads and all fellow colleagues.
  • Responsibility for all menu creation and rollout to include new item process, review and implementation.
  • Critical and creative thinking for seasonal menus grab and go and prepared foods
  • Provide assistance to other managers and associates to assure a smooth and efficient operation in all departments.
  • Responsible to maintain management confidentiality.
  • Monitor payroll and manage overtime
  • Cross train all associates in all foodservice jobs.
  • Commissary cooking based on consumption.
  • Complete daily consumption sheets.
  • Complete daily requisitions from all in store departments.
  • Complete daily requisitions from g
  • Complete serve safe training as needed
  • Complete daily production sheets with kitchen supervisor.
  • Work with kitchen supervisor on kitchen schedules.
  • Work with kitchen supervisor on bulk recipes.
  • Schedule bulk cooking days for afternoon shift.
  • Responsible for the appearance of the prepared food case.
  • Responsible for the sanitation of the prepared food case
  • Responsible for sanitation of walk in cooler
  • Responsible for rotation of products in cooler.
  • Complete schedules on a weekly basis.
  • Responsible for Presentation of counter prepared foods and working with customer service colleagues to maintain case appearance daily.
  • Responsible for all store communication of new menu items to include menu tasting
  • Responsible for preparation sheets for all culinary staff

Qualifications

  • Bachelor’s degree with concentration in food preparation, management nutrition or related field and 5 years of progressive experience in high-volume food production or catering, or equivalent combination preferred
  • Must be able to work in a fast-paced environment and available for all shifts
  • Ability to work a variety of schedules including nights, weekends and/or holidays
  • Ability to work autonomously and sell effectively
  • Outstanding people skills
  • Trustworthy and results-driven
  • Familiar with industry best practices

Working Environment

  • Operate in a kitchen environment, housed with equipment such as an oven, stove, dishwasher, slicer, coffee machine, steamer, mixer and chef’s knives
  • Frequent exposure to heat, steam, fire and noise.
  • Kitchen hazards such as hot surfaces and liquids, sharp knives, and slippery floors
  • Continuous hand washing is required. May include nights, weekends and/or holidays.

Physical Requirements

  • Occasionally required to sit, stand, reach, lift, bend, kneel, stoop, climb, push and pull items weighing 50 pounds
  • Manual dexterity, ability to smell, feel with fingers and visually inspect
  • Must be able to manipulate fingers, hands and arms to cut, measure, pour, serve, lift, carry and wipe
  • Auditory and visual skills; and the ability to follow written and oral instructions and procedures
  • Effectively communicate with staff, guests and vendors
