Creates and develops flavor keys from all ingredients available to the flavor industry which meet all regulatory requirements for the designated country, worldwide. Performs flavor duplication/matching as needed from a variety of benchmark sources, starting from a finished, consumer, retail product or other flavors available to AFF. Develops and maintains an up-to-date library of raw materials, from existing suppliers, and new sources as needed to maintain competitive advantage to AFF. Ensures all formulas created/developed utilize only approved food ingredients, and ensures all proper back-up documentation is available and up-to-date at all times. Ensures all work performed is within cost guidelines, when cost guidelines are available, and ensures all ingredients are compatible with each other from a solubility perspective and a shelf-life perspective. Communicates well with all superiors and coworkers while working independently. Understands various solvent systems, TTB guidelines, Labeling requirements, Kosher, Organic, Halal, Allergen requirements, as they pertain to the flavor industry.


  • Duplicates customer supplied flavors, in-house and vendor flavors based on requests received for various purposes, including cost cutting, substitution, discontinuance etc.
  • Creates, develops and matches new and/or existing flavors from scratch, using essential oils, aromatic chemicals, extracts and any other flavor raw materials available in the industry, based on defined customer needs or as possible proprietary products, with minimal direction, instructions and supervision
  • Maintains, upgrades and organizes existing library of raw materials on a regular basis by keeping up-to-date on new materials available in the industry and regularly ordering samples to expand library.
  • Utilizes GC/MS analysis to assist in the duplication and creation of flavors.
  • Performs cost calculations on all work performed.
  • Enters all development work in R&D formula files and database.
  • Performs shelf life studies and stability testing when needed.
  • Assists the QC and production departments in first-time production of all new products to resolve production difficulties.
  • Ensures Kosher, Halal, Organic, Allergen, GMO or other special requirements for each request are met.
  • Supplies Applications Lab with any newly developed flavors.
  • Provides training to new and current employees in flavor development.
  • Adheres to all safety procedures and policies.
  • Performs all other duties as assigned.

  • B.S. in Food Technology or equivalent education or experience.
  • Ten to fifteen’ experience in creative flavor chemistry.
  • Must have the ability to create flavors form scratch and/or GCMS analysis.
  • Must have good sensory experience and ability.
  • Must be flexible to travel according to company need, sometimes with a short notice.
