Today, Cottage Bakery successfully operates a European Style Café next to its retail Lodi Bakery. The central facility has been primarily geared towards frozen production with baking and finishing taking place at retail locations. Frozen dough products include individual danish, coffee cakes, specialty pastries, scones, bagels and croissants. The company also produces a variety of baked frozen layer cakes, cheesecakes and European mousse cakes plain or decorated.
Cottage Bakery’s plant has grown to more than 350,000 square feet of modern high speed production of frozen bakery products from five different manufacturing departments producing: frozen cake layers, cheesecakes, baked Danish and specialty products, deep frozen high quality European mousse tortes and enrobed desserts, frozen dough rich flakey danish, coffee cakes, breakfast breads and croissants, frozen dough upscale bagels and energy bars, par-baked frozen all natural long fermentation stone baked European breads, ciabatta, focaccia, rolls as well as rustic sandwich breads.
